The most common Peoria booking isn't a ballroom — it's a home with a good backyard. We set the grill line where it won't crowd the pool deck, keep the buffet on the shaded side, and time service so the food hits while people are still outside. February through March, Peoria fills with visiting groups, client outings and neighborhood gatherings. Our BBQ menus travel well for those: smoked brisket, tri-tip, pulled pork, sides that hold, plus a live grill station when the host wants a show. We staff continuous service instead of one rigid seating.

"We had BBQ Daddy for an 85 person wedding shower that was a nice event. Terry BBQ'd tenderloin, rib eye steaks, and salmon along with 2 cold and 2 hot appys (the bacon wrapped scallops were to die for). It was really a great event. Seriously, he brought his own grill! When Chef Terry says, 'We bring the steakhouse to you,' you better believe him. Every New York Strip, chicken, and salmon was grilled perfectly to temperature.
